Nutrition Today

This course relates scientific concepts of nutrition to the function of nutrients in basic life processes. It emphasizes individual needs; functions and sources of nutrients; current nutrition and health issues; scientific method for analysis and evaluation of nutrition information; dietary guidelines and current nutrition recommendations; digestion, absorption, and metabolism; health, fitness, and disease; nutrition in the life span; and food safety. Students evaluate their food intake using several methods, including a computer diet analysis. UC CREDIT LIMITATION: Credit for NUTR 100, NUTR 100H, NUTR 105, or NUTR 125. C-ID NUTR-110.

Instructor notes: The course syllabus will be available soon on BlackBoard. The textbook, Contemporary Nutrition: A Functional Approach, 3rd edition. NutriCalc Plus Online Software. Requirements for this course include: • Have regular access to a computer with connection to the Internet. • Ability to submit homework in one of three formats only: doc, docx, or pdf. WORK SUBMITTED IN OTHER FORMATS WILL NOT BE GRADED. • This is a hybrid course and students must have a strong self motivation for studying and learning online, plus be able to attend class once a week. • Be willing to spend up to 9 hours per week on the course, which is equivalent to 1.5 hours in class and 7.5 hours outside of class. • Have moderate experience with the Web, email, attachments, downloading, etc. • Understand and apply appropriate email netiquette. Although the course is a hybrid, it is not self-paced. You complete the assignments for each week on your own time schedule within that week. Each student assignment is to be completed and submitted by the due date (usually Thursday mornings prior to the start of class.) If you wait until the due date to submit assignments or do exams and have technical difficulty, makeup testing or submitting late assignments is not allowed.
